Any questions about ingredients/allergens/add ins/etc, pricing on custom orders of other types of cookies (oatmeal raisin, sugar cookies, macaroons, the list goes on!!!) or special requests: please let me know and I'll get back to you asap! I can flavor the shortbread with just about anything, like lemon or earl grey tea for example, or do them as thumbprints or dipped. Things like jams and chocolates and such can also be customized. You can absolutely freeze the drier cookies: shortbread, snickerdoodles, peanut butter freeze great. I've never tried freezing the ricotta chip or espresso brownie but those are moister cookies so might lose some texture, and you can't freeze the sandwiched cookies because of the jam.

Gluten free versions/requests will take an extra 3 days to allow the wheat flour in the air to settle, but this guarantees the treats safe for those with celiac's or gluten sensitivities.

For those who don’t know, I am a dogwalker/petsitter. This is a job that requires people to go to work and travel, and coronavirus concerns have seen my next several months’ worth of jobs cancelling for wfh and travel restrictions, so I am in financial trouble but also free to bake! Turnaround time should only be a few days, then shipping two to three.

Also re: coronavirus concerns: My household is not ill but to be extra safe I have been sterilizing my kitchen daily before baking (my mother the microbiologist gave tips) and not only constantly handwashing but wearing food service gloves while handling ingredients and packing orders so I can be sure not to touch anything else. But there is also no evidence of it being transmitted through food and mail services should be safe and continuing.

Thank you for your consideration!

Hey, Zee here! I've got an order for me and a few roommates :] I would love to grab one batch ooooof:

- Earl gray shortbread
- Ricotta chip
- Mexican hot chocolate
- Press cookies

The only allergies we have to work around are lemon (probably not gonna be an issue, though that does include citrus-stuff in general) and corn (which includes corn starch and corn syrup). I don't figure either one would come up, but just mentioning to be safe.

On a related note, our lemon-sensitive roommate is looking for a jam that doesn't involve any lemon in the pectin, is that something you think might be possible?

Regular sugar works, and thank you very much! And the bergamot is fine, we can go ahead with that. And "fruit pectin" usually means either apple or lemon — it's fine in this case though, I'll just cordon off my press cookies from them.

So: everything should be good to go, regular sugar instead of powder for the shortbread, and we'll skip the jam for now.
